Betfair is not a bookie. It is a betting exchange.
The basic difference is that you don't actually bet against the bookie, you bet against real people like you who are willing to bet otherwise. The odds don't come from bookie, it comes from whatever bets are being matched. If you are willing to back Chelsea for 100 EUR at 1.23 you just offer your bet and once there`s someone willing to take your bet, you are on.

Most important thing is best visible on football or horse racing. In tennis, if one player wins, the other player looses. Which means that laying the player is the same as backing the oponent. On the other hand, soccer and racing have more options. If one team doesn't win, it doesn't mean the other team won. It could be a draw, thus noone wins. This still qualifies as a Lay bet, because it siimply means the team won't win. The same thing works for horse racing. Any horse can win. Normally, if you think one of horses is definitely NOT going to win, you have to bet on every horse to make sure you win something. On the other hand on Betfair you simply Lay the horse.

1. You can Back (team will win) and you can LAY (team won`t win)

Let's bet 100 on Chelsea again at 1.23. Chelsea plays great, scores maybe and more and more people is convinced that the Chelsea will the match. The odds are going down as people are willing to Back Chelsea for whatever the odds are and Layers don`t want to risk too much. Odds will drop to 1.10. We will use this situation to make another bet that will make sure we won`t loose even if the Chelsea will loose the game. All you have to do is Lay chelsea for another 100 at 1.10. It`s that simple. Simple as it is: If the Chelsea wins, you get 23 from your first bet (BACK), and loose 10 from your Lay bet. Thus you won 13 (let's not talk about commision for now). If Chelsea looses, you loose 100 from your Back be, but you get 100 from you Lay bet, so you are even.
Remeber:
1. Non-loss bet can be made when Back odds are higher then Lay odds.
2. You win, if the team wins, ou don't loose anything is the team loose.
Arbitrage is essentialy the same thing as Non-loss bet only that you win whatever the outcome. In Non-loss bet we used the same amount for both bets, while at arbitrage we will bet a little more, or little less then initial stake.
Chelsea plays again and odds are 1.23 again a vy bet 100 EUR again. Odds drop to 1.10 again, but this time we Lay Chelsea fo 112 EUR instead of 100 we did in first case.
If Chelsea win, we get 23 from first bet, and loose 12 from the second bet. The profit is 11 EUR.
If Chelsea looses, we loose 100 of the first bet, but wil get 112 from the other be. The profit is 12 EUR.
